Ingredients

- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 16 oz cream cheese, softened
- 1/2 cup sour cream
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- Mix grated carrots, flour, sugar, oil, eggs, cinnamon, baking soda, and salt in a bowl.
- Spread the carrot cake batter evenly in the pan.
- Beat cream cheese, sour cream, and vanilla until smooth. Pour over the carrot cake batter.
- Bake for 50-60 minutes or until the center is set.
- Cool completely before serving.
