Description

A quick and healthy alternative to traditional rice, this cauliflower rice stir-fry is packed with flavor and nutrients.


Ingredients

  • 1 medium head cauliflower, riced
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 carrot, julienned
  • 2 tbsp soy sauce
  • 1 tsp ginger, grated
  • 1 cup frozen peas
  • 2 eggs, beaten (optional)
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Stir in bell pepper and carrot, cook for 3-4 minutes.
  4. Add riced cauliflower and peas, stir well.
  5. Pour in soy sauce and add ginger, mix thoroughly.
  6. Push the mixture to one side, pour beaten eggs into the empty space. Scramble until cooked, then mix into the stir-fry.
  7. Drizzle with sesame oil and season with salt and pepper. Serve hot.

Notes

  • Use a food processor to rice the cauliflower quickly.
  • For extra protein, add cooked chicken or tofu.
  • Store leftovers in an airtight container for up to 3 days.
