A quick and healthy alternative to traditional rice, this cauliflower rice stir-fry is packed with flavor and nutrients.
Ingredients

- 1 medium head cauliflower, riced
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 carrot, julienned
- 2 tbsp soy sauce
- 1 tsp ginger, grated
- 1 cup frozen peas
- 2 eggs, beaten (optional)
- 1 tbsp sesame oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic, sauté until fragrant.
- Stir in bell pepper and carrot, cook for 3-4 minutes.
- Add riced cauliflower and peas, stir well.
- Pour in soy sauce and add ginger, mix thoroughly.
- Push the mixture to one side, pour beaten eggs into the empty space. Scramble until cooked, then mix into the stir-fry.
- Drizzle with sesame oil and season with salt and pepper. Serve hot.
Notes
- Use a food processor to rice the cauliflower quickly.
- For extra protein, add cooked chicken or tofu.
- Store leftovers in an airtight container for up to 3 days.
