Ingredients
- 🐔 Chicken breast – 2 cups, cooked and shredded
- 🌾 Wild rice – 1 cup, uncooked
- 🍄 Mushrooms – 2 cups, sliced (preferably cremini or button)
- 🧅 Onion – 1 medium, diced
- 🧄 Garlic – 3 cloves, minced
- 🍗 Chicken broth – 6 cups
- 🥛 Heavy cream – 1 cup
- 🌿 Fresh thyme – 1 teaspoon, dried or 2 teaspoons fresh
- 🌿 Fresh parsley – 1/4 cup, chopped (for garnish)
- 🧂 Salt – to taste
- 🧂 Pepper – to taste
- 🛢️ Olive oil – 2 tablespoons (for sautéing)
Instructions
- Prepare the ingredients by shredding the cooked chicken, dicing the onion, mincing the garlic, and slicing the mushrooms.
- If using raw chicken, cook it in boiling water or sauté it in olive oil until fully cooked, then shred.
- In a large pot, heat olive oil over medium heat and sauté the onion until translucent, about 5 minutes.
- Add minced garlic and sliced mushrooms, cooking until mushrooms are tender, about 5-7 minutes.
- Stir in uncooked wild rice, then add chicken broth and thyme. Bring to a boil, then reduce heat and simmer for about 45 minutes.
- Once the wild rice is tender, reduce heat and stir in heavy cream, mixing gently.
- Add shredded chicken and heat through for about 5 minutes. Adjust seasoning with salt and pepper.
- Ladle soup into bowls and garnish with chopped parsley before serving.
