Ingredients

  • 1 cup stone-ground grits
  • 4 cups water
  • 1/2 teaspoon salt
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 pound shrimp, peeled and deveined
  • 4 slices bacon, chopped
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped parsley

Instructions

  1. Bring water to a boil in a saucepan. Stir in grits and salt. Reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally.
  2. Stir in cheese and butter until melted. Keep warm.
  3. Cook bacon in a skillet until crisp. Remove and drain on paper towels.
  4. In the same skillet, cook onion until soft. Add garlic and shrimp, cooking until shrimp turn pink.
  5. Stir in paprika, black pepper, chicken broth, and lemon juice. Simmer for 2 minutes.
  6. Spoon grits into bowls. Top with shrimp mixture and sprinkle with bacon and parsley.
