Ingredients

  • 1/4 cup hummus
  • 1/4 cup shredded carrots
  • 1/4 cup sliced cucumber
  • 1/4 cup sliced bell peppers
  • 1/4 cup spinach leaves
  • 1 tbsp chopped red onion

Instructions

  1. Spread hummus evenly over the tortilla.
  2. Layer carrots, cucumber, bell peppers, spinach, and red onion on top.
  3. Roll the tortilla tightly, tucking in the sides as you go.
  4. Slice in half and serve immediately.
