Delicious bite-sized mini empanadas with a crispy crust and flavorful filling.
Ingredients

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 1/4 cup cold water
- 1 cup cooked ground beef or chicken
- 1/4 cup finely chopped onions
- 1/4 cup diced bell peppers
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat oven to 375°F (190°C).
- Mix flour and salt in a bowl. Cut in butter until crumbly.
- Add cold water gradually until dough forms. Wrap and chill for 30 minutes.
- Sauté onions and bell peppers. Add meat and spices. Cook until well combined.
- Roll out dough and cut into small circles.
- Place filling in the center of each circle. Fold and seal edges with a fork.
- Brush with egg wash and bake for 20-25 minutes or until golden brown.
Notes
- Dough can be made ahead and refrigerated.
- Use any filling of your choice.
- Serve warm with dipping sauce.
