Ingredients

- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, sliced
- 1 zucchini, chopped
- 1 cup cherry tomatoes, halved
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 avocado, sliced (optional)
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Rinse quinoa under cold water, then cook with 2 cups water for 15 minutes or until water is absorbed.
- Toss vegetables with olive oil, salt, black pepper, and paprika.
- Spread vegetables on a baking sheet and roast for 20 minutes.
- Fluff quinoa with a fork and divide into bowls.
- Top with roasted vegetables, avocado, and fresh parsley.
