Ingredients

- 1 cup chickpeas, drained and rinsed
- 1 red bell pepper, sliced
- 1 zucchini, chopped
- 1 small sweet potato, diced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 cup hummus
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss chickpeas, bell pepper, zucchini, and sweet potato with olive oil, salt, pepper, and paprika.
- Spread vegetables on a baking sheet and roast for 25-30 minutes until tender.
- Spread hummus in a bowl and top with roasted vegetables.
- Garnish with parsley and feta cheese if desired. Serve warm.

- Store leftovers in an airtight container for up to 2 days.
