Description

A comforting Italian dish featuring tender manicotti pasta tubes stuffed with a creamy mixture of spinach and cheese, baked in a rich tomato sauce.


Ingredients

  • 8 oz manicotti pasta shells (about 12 pieces)
  • 10 oz fresh spinach, chopped
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 24 oz marinara sauce
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook manicotti according to package instructions until al dente. Drain and set aside.
  3. Heat olive oil in a pan over medium heat. Add spinach and garlic, cooking until spinach wilts.
  4. In a bowl, mix ricotta, mozzarella, Parmesan, egg, oregano, salt, pepper, and cooked spinach.
  5. Stuff each manicotti shell with the cheese mixture using a spoon or piping bag.
  6. Spread half the marinara sauce in a 9×13 inch baking dish.
  7. Arrange stuffed manicotti in the dish and top with remaining sauce.
  8. Cover with foil and bake for 25 minutes.
  9. Remove foil and bake for 10 more minutes until bubbly.
  10. Let rest 5 minutes before serving.

Notes

  • You can substitute cottage cheese for ricotta if preferred.
  • Add cooked ground beef or Italian sausage to the filling for a meat version.
  • Freeze leftovers in an airtight container for up to 3 months.
