Description
A healthy and cleansing vegetable detox soup packed with nutrients.
Ingredients
Scale
- 2 carrots, chopped
- 1 celery stalk, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 4 cups vegetable broth
- 1 cup kale, chopped
- 1 tsp turmeric
- 1 tsp ginger, grated
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook for 5 minutes.
- Add zucchini and cook for 3 more minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add kale, turmeric, and ginger. Cook for 5 more minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Add lemon juice for extra flavor.
- Freeze portions for quick meals.
